<expertise>My research focuses on using smart food processing to engineer food structures to enhance functionality, improve nutrient utilization, and reduce allergenic potential. Furthermore, I study how these changes influence human health through key metabolic and immune pathways. By integrating novel technologies, foodomics, molecular interactions, and advanced analytical tools, I design ingredients with improved health-promoting functionality.</expertise>
